Homemade Bacon!

I'm almost embarrassed to say that I've just recently discovered the wonders of homemade bacon, despite having a food blog for four years. No, scratch that, I am embarrassed! It really is sad, and I repent here and now for all the world to see. For some reason making homemade bacon is shrouded in some sort of strange and mysterious veil of complexity. Once you see how easy it is it's like you've been smacked in the head with a clue-by-four. This compounded my embarrassment.

Homemade Habanero Kielbasa

A few months ago I reviewed Oakridge BBQ rubs , and I loved them. So, when I saw that they were offering a one-time-only limited edition Habanero Death Dust rub I was all over it. When I received the rub last week I immediately tasted it. Wow! This stuff packs some serious heat, but it's balanced with great flavor.

Hot & Fast BBQ Beef Brisket

Here is the process I used to cook a "hot & fast" barbequed beef brisket. Brisket is generally more than a little initimidating for those that have never cooked one. I know that was the case for me back in the day. For those uninitiated, the brisket is a very tough cut found on the chest of the animal , between and behind the front legs (foreshank). Cattle walk a lot, so the front legs get a good workout. After one look at a brisket you will see that it looks like a cow's odometer.
