Fire-Roasted Corn Salsa

This salsa is a perfect end to summer, as it captures and showcases a ton of classic summer flavors. You have sweet roasted corn, tomatoes, roasted peppers, onion, avocado and lime along with black beans and cilantro. Who doesn't like sweet corn roasted on the grill? That's a serious meal, yes, meal, in our house this time of year. I remember going on long corn-hunting expeditions with my grandfather along the country roads of central Missouri as a kid.

Garlic Herb & Honey Butter

Compound butters are a magical thing. They are brain-dead easy to make, but the results have a huge range of incredible applications. This particular butter is intended to be served at the table for bread, but it would also be a great base for cheesy garlic bread. Just add some parmesan and cheddar, schmear, broil or grill and voila! Leave out the honey and it would be excellent as a elegant finish for grilled steak or fish.

Onion & Bacon Marmalade

I've made onion marmalade before , but I'm grilling brussel sprouts tonight and I wanted something special to dress them. The thought is that the sweetness of the onion and the richness of the bacon will help balance the pungency of the sprouts. This marmalade is very versatile, and it's also just this side of addictive. It's amazing on a warm slice of baguette with some goat cheese, as you see pictured here, but with the addition of some thinly-sliced leftover steak.
